Oven-Roasted Pork with Sauce
A delicious meat dish from the oven, which pairs well with numerous side dishes. On weekends, when you usually have more time for cooking, prepare gnocchi or dumplings alongside, while during the week, pasta or rice are also excellent choices.

1 kg Meat, pork, neck

Preheat the oven to 180 degrees Celsius. Wash the pork, dry it with paper towels, and cut it into bite-sized pieces. Season the meat with pepper and salt. Peel the garlic and onion, and finely chop them separately. Peel the carrot, wash it, and finely grate it.

Place a roasting pan on the stove and heat it well. Grease it with oil, then add the seasoned meat and sear it on all sides.

Remove the seared meat from the pan and keep it warm on a plate. Add the onion, carrot, and garlic to the pan and sauté the vegetables for 5 to 7 minutes, stirring occasionally, until they soften. Sprinkle the ingredients with flour and continue to sauté for another 1 to 2 minutes, stirring constantly. Then, pour in the wine. Use a spatula to scrape the bottom of the pan to release any caramelized bits that formed during searing.

Reduce the wine by half, then add the broth. Return the meat pieces to the pan and add a bay leaf. If necessary, add a little more water. Place the pan in the preheated oven for about 80 minutes, stirring the dish occasionally.

Once the meat is tender and the sauce has thickened, remove the pan from the oven. Serve the dish on plates, accompanied by gnocchi, dumplings, pasta, or any potato-based side dish.
