Oxtail Goulash
This is a very old dish that was prepared in the past when people didnt want to waste any part of the meat. Oxtail is a very tough meat, but when prepared in a goulash, it becomes tender and juicy.

Ingredients

900 g Meat, beef, ribs

13 spoon Oil, olive

1 piece Onion, raw

3 pods Garlic, fresh

1 pinch Salt, table

20 g Butter, unsalted

2 spoons Wheat flour, white, multi-purpose

2 spoons Tomato, concentrate, without salt

1 l Soup base, beef, cube

2 piece Spices, bay (leaves)

1 teaspoon Salt, table

1 teaspoon Spices, pepper, black

2 piece Carrot, fresh

1 piece Green, raw
Steps

Wash and dry the pieces of oxtail. Peel and wash the onion and garlic. Crush the garlic with a knife and chop it finely. Cut the onion into larger rings. Wash, peel, and slice the carrots into rings. Wash the celery and cut it into smaller pieces.

Heat a large pot and pour in the oil. Sear the pieces of oxtail in the oil until they are browned on all sides. Cook them for about 10 minutes, turning them several times in between.

Transfer the pieces of meat from the pot to a plate and add the onion and salt to the pot. Fry it for 5 minutes, stirring until it turns golden brown. Add butter and flour, mix well, and cook over moderate heat for 3 minutes.

Add the chopped garlic and tomato paste. Mix all the ingredients well with a cooking spoon. Return the oxtail to the pot along with any liquid that may have remained on the plate. Pour in the beef broth and mix. Add bay leaf, a teaspoon of salt, and pepper. Mix again, cover, and cook over moderate heat for 5 hours. Stir occasionally during cooking.

After 5 hours of slow cooking, add the carrots and celery to the pot and cook for another 30 minutes. Serve the prepared goulash on plates and offer it immediately.
