Paella with Chicken and Chorizo
Paella is a famous Spanish dish known worldwide. The main ingredient is rice, to which various additions such as different meats, sausages, seafood, fish, vegetables, and of course spices are added. This time, we present you with an exceptionally tasty combination of chicken, spicy sausage, beans, and peppers.

Ingredients

200 g Meat, chicken, breasts

120 g Sausage, chorizo

0.25 teaspoons Saffron, dry

300 g Rice, white, medium grain

1 l Soup base, chicken, cube

1 handful Beans, fresh

1 piece Parsley, fresh

Steps

Wash the chicken breasts and dry them well with paper towels. Cut them into bite-sized pieces and lightly season with pepper and salt. Peel the sausage and cut it into smaller pieces. Peel the garlic and onion and finely chop them separately. Clean the peppers, wash them, and cut them into smaller pieces. Soak the saffron threads in two tablespoons of hot water and let them sit for 5 minutes.

Heat olive oil in a large pan. Add the chicken pieces and sausage to the hot oil and fry them over medium heat, stirring occasionally, for about 5 minutes. Then add the onion and continue frying until the onion softens and becomes translucent. Stir in the garlic, paprika, and saffron with the water in which the threads were soaked. Let it simmer for 1 minute. Then add the peppers and cook for another 2 minutes.

Stir in the rice and pour in about one liter of hot broth. Bring to a boil and let the paella simmer uncovered for 15 minutes, stirring once or twice. Season with salt and pepper to taste. Add more broth if needed.

Rinse the parsley sprigs under running water, shake them dry, and roughly chop them. When the rice is almost cooked, stir in the beans and half of the chopped parsley, and cook for another 3 to 4 minutes.

Once all the liquid has evaporated, remove the pan from the heat. Cover and let it rest for 5 minutes. Serve the prepared paella on plates, sprinkle with the remaining parsley, and serve with lemon wedges.

If you dont have spicy Spanish chorizo, you can use another type of sausage (e.g., kulen or sujuk).
