Palmiers Cookies (Elephant Ears)

275 g Dough, puff

Measure sugar into a bowl and mix in ground cinnamon. If you don't want to use cinnamon, simply omit it.

Place a sheet of parchment paper on your work surface and sprinkle half of the sugar on it. Spread it evenly over the entire surface. Unroll the fresh puff pastry and place it on the sugar. Sprinkle the remaining sugar evenly over the pastry. Lightly roll the pastry with a rolling pin to help the sugar adhere.

To achieve the classic shape of the cookies, we need to shape the pastry. Roll the pastry from both the top and bottom sides towards the center to form a log. Let it chill in the refrigerator for about 15 minutes to firm up, which will help it maintain its shape during baking.

Using a sharp knife, cut the chilled pastry into 0.5-1 cm thick slices.

Line a baking sheet with parchment paper. Arrange the sliced pieces on the sheet, leaving a few centimeters of space between them as the cookies will spread slightly during baking.

Bake the cookies in a preheated oven at 210°C (410°F) for about 15 minutes, or depending on your oven. After about 8 minutes, when you see the cookies have started to color, flip them and bake for another 7 minutes. They are done when they are lightly golden and still slightly soft.

Transfer the hot cookies from the baking sheet. They will become hard and crispy as they cool.
