Pancakes are delicious and easy to make. With a bit of imagination, they can quickly transform into pouches, hiding juicy oranges instead of golden coins.

Ingredients

3 pieces Orange, fresh

1 spoon Alcohol, Rum

1 handful Raisins

5 spoon Sour cream

1 pinch Spices, cinnamon, ground

150 g Wheat flour, white, multi-purpose

Prepare the pancake batter using the ingredients.

Thoroughly wash one orange. Peel it using a vegetable peeler to create thin strips of orange zest. Peel the remaining oranges completely, then separate the orange segments and cut them into smaller pieces. Wash the mint thoroughly and pluck the leaves.

In a large bowl, mix the orange pieces, raisins, rum, sour cream, and cinnamon. Place a pan on the stove and add a drop of oil, spreading it evenly. Wait for the oil to heat up, then pour in the first ladle of batter. Spread the batter evenly across the pan to avoid holes and ensure the pancake is of uniform thickness.

Cook the pancake on one side – you can use a wooden spatula to lift it and check if it’s done. Then flip the pancake and cook the other side. Place the cooked pancakes on a warmed plate. Repeat the process until you have enough pancakes or use up all the batter.

Place a spoonful of the prepared filling in the center of each pancake, then fold them into pouch shapes and tie them with a strip of orange zest. Serve on plates and garnish with fresh mint leaves.

Advice
To achieve beautifully shaped pouches, use a 10 cm diameter pancake pan. Its best to use organic oranges, as their peel is not treated with pesticides. If unavailable, briefly dip the orange in boiling water and wipe it thoroughly to remove any wax containing toxins.
