Pancakes with Apples and Yogurt

Ingredients

2 piece Egg, fresh

250 g Yogurt, plain, from whole milk

1 teaspoon Vanilla, extract, imitation

240 ml Milk, whole milk

150 g Wheat flour, white, multi-purpose

0.5 teaspoons Spices, cinnamon, ground

1 pinch Salt, table

2 spoons Sugar, white

1 teaspoon Baking powder

2 piece Apple, fresh

pieces Oil, vegetable oil, canola

pieces Butter, unsalted
Steps

In a large bowl, add in the following order: eggs, yogurt, vanilla extract, milk, flour, ground cinnamon, salt, sugar, and baking powder. Quickly mix the ingredients with a hand whisk or an electric mixer to form a uniform batter. Do not mix for too long, as the batter does not need to be completely smooth and can have some small lumps. If the batter is too thick, add a little more milk; if it is too thin, add a bit more flour.

Wash the apples and peel them if desired. Grate them coarsely and mix them into the prepared batter.

Set the stove to medium-high heat and heat a large pan with some oil (about 1 tablespoon). Add small dollops of the prepared batter to the heated and greased pan (use a heaping tablespoon of batter for each pancake) and slightly flatten them with the back of the spoon to form small, round pancakes.

Cook the pancakes on medium heat until the edges turn golden brown and the bottom is evenly cooked. Carefully flip the pancakes with a spatula and cook the other side until golden brown.

Remove the cooked pancakes from the pan and keep them warm on a serving plate. Optionally, spread them with butter and cover them.

Repeat the process until all the batter is used up. Add more oil to the pan as needed between batches.

Before serving, sprinkle the prepared pancakes with powdered sugar if desired.
