Pancakes with Bananas and Caramel

Ingredients
Dough

180 g Flour, Wheat, bread flour

3 pieces Egg, fresh

375 ml Milk, whole milk

1 pinch Salt, table

2 pinch Sugar, white

1 spoon Oil, vegetable oil, canola
Filling

4 pieces Banana, fresh

60 g Butter, unsalted

175 g Sugar, brown
-
4 spoon Water

100 ml Sweet cream

Prepare the batter: In a bowl, add the flour. Slowly mix in the eggs, milk, and oil, and whisk everything together with a hand whisk (or electric mixer) until you have a smooth, runny batter. Season with salt and sugar. Let the prepared batter rest for at least 30 minutes.

Prepare the caramel. In a saucepan, melt the butter, add sugar, and 4 tablespoons of cold water. Heat while stirring until the sugar dissolves. Then stop stirring and cook until the mixture turns a pale golden yellow. Add the cream and continue stirring until you have a uniform brownish mixture. Turn off the heat and stir the prepared caramel occasionally.

Place a pan on the stove and heat it well. Pour a little oil into the hot pan and spread it evenly. Then pour enough batter into the pan to thinly cover the bottom. Once the pancake is cooked on one side, flip it with a spatula and cook the other side. Repeat the process until you run out of batter. Add oil as needed.

Peel the bananas and slice them into rounds. Place the pancakes on plates and cover half of each pancake with banana slices, then drizzle with the prepared caramel. Fold the pancakes (the uncoated part over the coated part), then carefully fold them again to form quarters (see picture). Serve immediately.
