Pancakes with Caramel

Ingredients
Caramel sauce

Steps

First, prepare the pancake batter. In a bowl, mix the eggs, milk, water, grated orange zest, sugar, and salt, then gradually add the flour while mixing, one spoonful at a time. In the end, you should have a thick, smooth batter without lumps. Let it rest for 30 minutes before cooking.

Meanwhile, prepare the caramel sauce. In a thick-bottomed saucepan, add the sugar. Add water, stir, and slowly heat the mixture over medium heat without further stirring. Once all the sugar has dissolved, slightly increase the temperature and cook the sugar syrup until it turns golden brown or amber in color.

Meanwhile, in another saucepan, heat the sweet cream just below boiling point (80 degrees Celsius). When the caramel is ready, carefully pour the hot cream into the saucepan while vigorously whisking with a whisk to combine the caramel and cream well. Be careful not to burn yourself, as the caramel is very hot.

Add cold butter and continue cooking the sauce while stirring until it thickens appropriately. It's done when a visible trail is left on the bottom of the saucepan. Remove the saucepan from the heat, and if you want salted caramel, add salt. Mix well until the salt is fully dissolved.

Add melted butter to the pancake batter and mix well. Place a pancake pan on the stove and heat it well, then grease it with a piece of butter. Pour enough batter into the greased pan to thinly cover the bottom. When the pancake is golden brown on the bottom, carefully flip it with a spatula and cook the other side. Place the cooked pancake on a plate and spread it with caramel sauce. You can sprinkle ground hazelnuts or peanuts on top. Roll the pancake into a roll. Repeat the process until you run out of batter.

Serve the pancakes on plates. Optionally, drizzle a little more caramel sauce on top and sprinkle with grated or ground nuts. For an extra touch, you can add a dollop of whipped cream.

The water in the pancake batter can be completely replaced with milk, but pancakes made with a combination of water and milk turn out very soft.
