Pancakes with Caramelized Pears
When youre unsure how to serve pancakes, its time to try the recipe below. Caramelized pears are very tasty and juicy, filling the kitchen with intoxicating autumn aromas. If desired, you can also add a spoon or two of vanilla Greek yogurt to the pancakes before adding the caramelized pears. A simple dessert that you simply wont be able to resist.

Ingredients
Caramelized pears

80 g Butter, unsalted

3 spoons Sugar, brown

0.5 teaspoons Spices, cinnamon, ground

3 pieces Pear, fresh

pieces Juice, lemon

Pancakes

2 piece Egg, fresh

1 spoon Butter, unsalted

1 pinch Salt, table

1 spoon Sugar, white

250 g Wheat flour, white, multi-purpose

350 ml Milk, whole milk

1 dl Water
Steps

Crack the eggs into a bowl and whisk them with a hand whisk. Pour in the milk and add the flour, salt, sugar, and melted butter. Mix the ingredients well to form a smooth batter without lumps, then stir in the mineral water at the end. Let the batter rest for at least 20 minutes before cooking.

Wash the pears and cut them into quarters. Remove the stems and cores, then dice them into approximately 1 cm cubes.

Melt the butter in a pan, and when it starts to foam slightly, add the brown sugar and cinnamon. Heat while stirring with a spatula until all the sugar has melted. Add the pears and optionally a little lemon juice. Gently stir the pears with the spatula so that the caramel mixture evenly coats all the pieces. Cook them over low heat for about 5 minutes until they soften and start to release juice, then remove the pan from the heat.

Place a pancake pan on the stove and heat it up. Grease it with butter, then pour in enough batter with a ladle to thinly cover the bottom. When the pancake is cooked on the bottom side, flip it with a spatula and cook the other side. Place the cooked pancake on a warmed plate. Repeat the process until all the batter is used. Grease the pan with butter as needed.

When serving the pancakes, place a spoon or two of caramelized pears on each one, then fold or roll them up, place them on a plate, dust with powdered sugar, and serve.
