Pancakes with Cottage Cheese and Raisins
Pancakes are one of those dishes that everyone loves. We can enjoy them for breakfast, lunch, or dinner. Filled with a mixture of cottage cheese, sour cream, and soaked raisins, they become an excellent standalone meal, perfectly complemented by homemade compote or simple whipped cream.

60 g Raisins

3 spoons Alcohol, Rum

200 g Cheese, cottage cheese

50 g Sour cream

3 spoons Sugar, white

pieces Lemon zest, fresh

Pancake batter

2 piece Egg, fresh

2 teaspoons Oil, vegetable oil, canola

350 ml Milk, whole milk

1 pinch Salt, table

40 g Sugar, white

230 g Wheat flour, white, multi-purpose

1 dl Water

In a bowl, using a whisk or an electric mixer, mix the eggs, milk, oil, sugar, and salt until smooth. Gradually add the flour (spoon by spoon) while mixing, so the ingredients combine and form a smooth, thick batter. Stir in the mineral water to make the pancakes lighter. Let the batter rest for at least 20 minutes before cooking.

Sort and rinse the raisins. Place them in a small bowl, pour rum (or orange juice) over them, and let them soak for 10 to 15 minutes. In a larger bowl, mix the cottage cheese, sour cream, sugar, and lemon zest.

Heat a pancake pan and add a little oil, tilting the pan to spread it evenly (pour any excess oil into a container). Using a ladle, pour enough batter into the greased pan to thinly cover the bottom. When the pancake turns golden brown on the bottom, carefully flip it with a spatula and cook the other side. Place the cooked pancake on a warmed plate and cover it to keep it warm. Repeat the process until all the batter is used.

Spread the cooked pancakes with the cottage cheese filling and sprinkle the soaked raisins over it. Roll them up, place them on plates, and serve while still warm.
