Pancakes with Cottage Cheese, Apples, and Cinnamon
Thanks to the addition of cottage cheese and grated apples, these pancakes are very juicy and tender, melting in your mouth. They pair excellently with compote, and you can also spread apple butter on them or serve them with Greek yogurt.

250 g Cheese, cottage cheese

3 pieces Egg, fresh

1.5 spoons Honey

0.25 teaspoons Spices, cinnamon, ground

90 g Flour, Whole wheat

Steps

Place the cottage cheese in a bowl and mash it with a fork. Add the eggs, cinnamon, and honey, and mix everything well. If desired, you can also mix in some grated lemon zest.

Wash the apple and coarsely grate it, including the skin. Mix it into the egg and cottage cheese mixture. Finally, fold in the flour mixed with baking powder.

Heat a pan on the stove and grease it with oil or butter. Place spoonfuls of the batter (use a heaping tablespoon for each pancake) into the greased pan and flatten them slightly with the back of the spoon to form small, round pancakes. Cook the pancakes until golden brown on both sides (about 2 minutes per side).

Serve the pancakes warm on plates, accompanied by compote, Greek yogurt, or apple butter.
