Pancakes with Honey

Ingredients

1 piece Lemon, fresh, without shell

200 g Wheat flour, white, multi-purpose

1 pinch Salt, table

450 ml Milk, skimmed

2 pinch Spices, cinnamon, ground

125 g Butter, unsalted

175 g Honey

2 piece Egg, fresh
Steps

Thoroughly wash the lemon and grate about one teaspoon of zest. Sift the flour into a bowl along with a pinch of salt. Make a well in the center, crack the eggs into it, and mix continuously. While constantly stirring, slowly pour in the milk, and add the lemon zest and cinnamon. This will result in a fairly thick and smooth batter.

Melt half of the butter and mix it into the batter, then place it in the refrigerator to rest for about one hour. Just before starting to cook the pancakes, warm the honey until it is lukewarm and keep it warm. Heat a pan on the stove, then melt a small piece of butter in it. Pour the first ladle of batter into the pan and tilt it to spread the batter evenly across the bottom. Cook for about 2 minutes until the pancake is golden brown on the bottom.

Flip it using a wooden spatula and cook the other side. Transfer the pancake to a warm plate and spread it with warm honey. Fold the pancake and keep it warm in the oven. Repeat the process until all the batter is used.

Serve the pancakes on plates, drizzle with the remaining honey, and offer them to your guests.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it thoroughly to remove the wax, which contains toxins.
