Pancakes with Salmon and Mozzarella

Prepare the pancake batter from the listed ingredients and let it rest for 30 minutes.

Pour a little oil into a pan, spread it around, and place the pan on the stove. Heat the pan well and pour in the first ladle of batter. Spread the batter evenly across the pan so there are no holes and the layer of batter is as uniform as possible. Cook the pancake on one side – you can use a wooden spatula to lift the pancake and check if it is properly cooked. Then flip the pancake and cook the other side. Place the cooked pancakes on a warmed plate. Repeat the process until you have cooked enough pancakes or used up all the batter.

Rinse the dill under water, shake it dry, and finely chop it. Slice the mozzarella into thin pieces. Preheat the oven to 180 °C. Spread a spoonful or two of sour cream evenly over each pancake. Then arrange a few slices of salmon on the pancake, and top with one or two slices of mozzarella. Sprinkle with dill on top. Roll up the pancake and place it in a baking dish lined with parchment paper. Repeat the process until all the pancakes are rolled.

Place the baking dish with the pancakes in the preheated oven and bake for 10 minutes until the cheese melts. Remove the dish from the oven and transfer the pancakes to a cutting board. Cut the pancakes into pieces and serve them warm.
