Pancakes with Walnuts

Ingredients
Dough

2 piece Egg, fresh

350 ml Milk, whole milk

0.5 dl Water, bottled

1 spoon Oil, vegetable oil, canola

1 pinch Salt, table

1 spoon Sugar, white

220 g Wheat flour, white, multi-purpose
Filling

200 g Walnuts
-
70 g Sugar, brown

1 spoon Alcohol, Rum

150 ml Sweet cream

1.5 spoons Oil, vegetable oil, canola

In a bowl, use a whisk or an electric mixer to combine the eggs, milk, mineral water, oil, sugar, and salt. While mixing, gradually add the flour spoon by spoon until all the ingredients are blended into a smooth batter. The batter should be runny but not watery. If the batter is too thin, add a bit more flour. Let the batter rest for about 30 minutes.

Mix all the ingredients for the filling until smooth and store it in the refrigerator until ready to use.

Pour a little oil into a pan, spread it around, and place the pan on the stove. Heat the pan well and pour in the first ladle of batter. Spread the batter evenly across the pan so there are no holes and the layer is as uniform as possible. Cook the pancake on one side – you can use a wooden spatula to lift the pancake and check if it’s cooked. Then flip the pancake and cook the other side. Place the cooked pancakes on a warmed plate. Repeat the process until you have enough pancakes or until all the batter is used.

Spread the walnut filling onto the cooked pancakes and roll them up. Serve two pancakes together on a plate, dust them with powdered sugar, and enjoy.

Advice
If desired, mix in some grated chocolate (chocolate powder) or Nutella into the filling. The pancakes can also be served with whipped cream.
