Pancakes with Yogurt and Stewed Apples

In a bowl, crack the eggs and whisk them with a hand whisk. Pour in the milk and add the flour, salt, sugar, and melted butter. Mix the ingredients well to form a smooth batter without lumps, and finally stir in the apple cider. If the batter is very thick, thin it with a few tablespoons of milk, water, or apple cider. Place the bowl with the prepared pancake batter in the refrigerator for one hour.

Just before starting to cook the pancakes, wash the apples, peel them, and remove the stems and cores. Cut them into pieces.

Melt the butter in a pan. Add the apples and mix them with the butter. Add the flour and mix the apples again thoroughly so that the flour coats all the pieces. Stir in the sugar, lemon juice, apple cider, and cinnamon. Stew the apples over moderate heat, stirring occasionally, for 5 minutes until they soften slightly. If needed, add one or two more tablespoons of apple cider. Remove the pan with the stewed apples from the heat.

Place a pancake pan on the stove and heat it well. Grease it with butter, then pour in enough batter to thinly cover the bottom. When the pancake is cooked on the bottom side, flip it with a spatula and cook the other side. Place the cooked pancake on a warmed plate. Repeat the process until all the batter is used. Grease the pan with butter as needed.

When serving the pancakes, spread each one with a spoonful of yogurt and top with the stewed apples. Fold the pancakes as desired, place them on plates, dust with powdered sugar, and serve.
