Panna cotta with coffee syrup
The popular Italian dessert made from cooked cream is a classic that allows for numerous adaptations to different flavors. It can be topped with fruit, caramel, or chocolate sauces, but we decided to use a coffee syrup, which makes this excellent dessert even more delicious and enticing.

Ingredients
Coffee syrup

200 ml Coffee, espresso

70 g Sugar, white

500 g Sweet cream

250 ml Milk, whole milk

140 g Sugar, white

1 pod Vanilla, extract, natural

50 ml Water

3 teaspoons Gelatin powder, unsweetened

In a small bowl, mix the powdered gelatin with water. Let it sit for 5 minutes to allow the gelatin to swell. Place a saucepan on the stove and mix the coffee and sugar in it. Heat over medium heat while stirring until the sugar dissolves. Once the liquid boils, reduce the temperature and let it simmer gently for about 10 minutes. Remove the saucepan from the heat and let the coffee syrup cool.

Place a new saucepan on the stove with the heavy cream, milk, and sugar. Split the vanilla bean lengthwise and scrape out the seeds with the tip of a knife, adding both the seeds and the pod to the saucepan. Cook over moderate heat, stirring occasionally, for about 5 minutes until the sugar dissolves, then remove the saucepan from the heat. Remove the vanilla pod, add the gelatin, and stir until it is completely dissolved.

Rinse the glasses with cold water and drain them. First, pour a little coffee syrup into the glasses, then fill them almost to the top with the cooked cream. Pour the cream into the glasses over the back of a spoon to help maintain the two layers. Let the cream cool to room temperature, then cover the glasses with plastic wrap and refrigerate for 2 to 4 hours to allow the dessert to cool and set.

Pour the cooled coffee syrup over the chilled dessert and serve directly in the glasses.
