Ingredients
-
350 ml Sweet cream
-
150 ml Milk, whole milk
-
100 g Sugar, white
-
0.5 piece Vanilla, extract, natural
-
10 g Gelatin powder, unsweetened
-
6 spoon Water
-
2.5 piece Kiwi, fresh
-
0.5 piece Banana, fresh
Steps
-
Sprinkle the powdered gelatin into a small bowl and pour cold water over it. Mix well, then let it sit for 5 to 10 minutes to allow the gelatin to swell.
-
Pour the cream and milk into a saucepan. Split the vanilla bean in half and scrape out the seeds with the tip of a knife. Add the seeds, the vanilla pod, and sugar to the saucepan. Place it on the stove and heat gently over moderate heat, stirring until all the sugar has dissolved. Just before the liquid boils, remove the saucepan from the heat. In a small saucepan, slowly melt the gelatin over low heat (be careful not to let it boil!) and then mix it into the hot cream and milk mixture.
-
Prepare the glasses or molds in which you will serve the dessert. Fill them up to 2/3 with the cream mixture. Let it cool to room temperature, then refrigerate the molds for 2 to 4 hours to allow the mixture to cool completely and set firmly.
-
Shortly before serving, prepare the kiwi topping. Peel half a kiwi and cut it in half lengthwise. Slice both halves into pieces. Cut two kiwis in half and scoop out the flesh with a spoon, adding it to a blender. Peel a banana and slice it into rounds, adding them to the blender as well. Blend the fruit into a smooth puree, strain it if desired, and sweeten with sugar or honey.
-
Once the cream mixture has fully set, remove the glasses from the refrigerator. Spoon the fruit puree over the set cream. Decorate the dessert with kiwi slices and serve.

Advice
The fruit can also be mashed with a fork or blended using an immersion blender. If desired, strain the fruit puree through a fine sieve to remove the seeds. Instead of powdered gelatin, you can use sheet gelatin.
