1 spoon Milk, whole milk

1.25 teaspoons Gelatin powder, unsweetened

1 pod Vanilla, extract, natural

Steps

Pour 1 tablespoon of milk into a small bowl. Sprinkle the powdered gelatin over the milk. Let it sit for 10 minutes to allow the gelatin to bloom.

In a saucepan, mix the milk, sweet cream, and sugar. Split the vanilla bean lengthwise and scrape out the seeds with the tip of a knife. Add both the seeds and the pod to the saucepan. Place the saucepan on the stove and slowly bring the mixture to a gentle boil over moderate heat. Stir until the sugar is completely dissolved. Once the liquid boils, remove the saucepan from the heat, take out the vanilla pod, and add the gelatin. Stir well until the gelatin is completely dissolved. Let the mixture cool slightly.

In a bowl, use an electric mixer to cream together the mascarpone and sour cream. Gradually mix in the cooled milk, cream, and gelatin mixture.

Lightly grease the molds with oil. Then fill them to the top with the prepared mixture. Let the mixture cool to room temperature, then cover the molds with plastic wrap and refrigerate for 3 to 4 hours to allow the dessert to set.

While the dessert is chilling, prepare the strawberry puree. Quickly rinse the strawberries under running water if needed, clean them, and cut them into small pieces. Place the pieces in a bowl, sprinkle with powdered sugar, and drizzle with lemon juice. Mix well and blend with an immersion blender to create a fruit puree. Strain the strawberry puree through a fine sieve.

Carefully unmold the chilled and set dessert onto a plate, garnish with the strawberry puree and fresh strawberries, and serve.
