15 g Carp, soaked

50 g Cucumbers, sour

40 g Shallot

4 pieces Fish, anchovy fillets in oil

0.3 dl Alcohol, Wine, White

Steps

Remove the tentacles from the calamari along with the beak, membrane, innards, and bone. Keep the tentacles and discard the beak.

Clean the calamari and cut them into 1 cm thick rings. Dry them with paper towels. Dip the calamari in flour, then in beaten eggs, and slowly drop them into the fryer heated to 170 degrees Celsius.

Place the fried calamari on a paper towel to drain excess oil, then season with salt.

Tartar Sauce: Place egg yolks in a mixing bowl. Add mustard, lemon juice, and a few drops of Worcestershire sauce. While mixing with an electric mixer, slowly pour in oil and mix until you get a mayonnaise-like sauce.

Finely chop capers, pickles, shallots, anchovy fillets, and hard-boiled eggs, and add them to the mayonnaise sauce. Add wine, sour cream, chopped parsley, and chervil, and mix the ingredients well. Season the sauce with salt and pepper to taste.

Serve the fried calamari with fried potatoes and tartar sauce.
