Parmesan Soufflé
With a delicious Parmesan soufflé, you can surprise your loved ones even for breakfast. Its certainly not an everyday dish, but theres nothing wrong with making breakfast something special from time to time.

Ingredients

2 twigs Basil, fresh

6 pieces Tomato, red

1 pod Garlic, fresh

250 ml Milk, partially skimmed

250 ml Sweet cream

2 piece Spices, bay (leaves)

4 pieces Egg, fresh

2 piece Egg, egg yolk, fresh

225 g Cheese, Parmesan, grated

4 pinch Salt, table

2 pinch Spices, pepper, black

Rinse the basil under running water, shake it off, and pluck the leaves. Rinse the cherry tomatoes under running water. You can leave the green stem. Peel and rinse the garlic clove.

Place a saucepan with milk and cream on the stove. Heat until bubbles start to appear. The milk mixture must not boil! Remove the saucepan from the heat. Add the bay leaves and garlic clove to the milk mixture. Cover the saucepan and let it sit for 30 minutes to allow the milk to absorb the flavors.

Meanwhile, crack the eggs into a bowl and add the yolks. Whisk everything together well with a hand whisk. Remove the garlic and bay leaves from the milk and cream mixture. Slowly pour the egg mixture into the milk mixture while continuously stirring.

Strain the mixture through a fine sieve into a bowl, as this will make the soufflé lighter. Add the Parmesan, salt, and pepper, and mix everything well.

Preheat the oven to 190°C. Grease the molds well and fill them with the prepared mixture. Do not fill the molds to the top! Place a few basil leaves on top and a tomato in the center of the mixture. Place the molds in a deep baking dish, then pour hot water into the dish. The water should reach halfway up the molds.

Carefully place the baking dish in the oven. Bake the soufflés for 40 minutes. When the edges are nicely browned and a crust forms on the surface, the soufflés are ready. Carefully remove the baking dish from the oven. Transfer the molds to serving plates and serve with homemade bread.
