Ingredients

350 g Pasta, noodles, fresh

1 spoon Oil, olive

40 g Butter, unsalted

1 piece Onion, raw

200 g Ham, pressed, non-fat

150 g Beans, fresh

1 piece Egg, fresh

2 piece Egg, egg yolk, fresh

60 g Cheese, Parmesan, grated

Steps

Place a pot with a generous amount of water for cooking pasta on the stove. Salt the water well, and once it boils, add the pasta and cook for the time indicated on the packaging.

Peel the onion and finely chop it. Cut the cooked ham or prosciutto into small pieces.

In a large pan, add oil and butter. Once the butter melts, add the onion and sauté until it becomes translucent and slightly soft. Add the ham and cook together for another 3-4 minutes until the ham is slightly browned.

Add the peas to the pan and quickly sauté them with the other ingredients. Pour in some of the pasta cooking water and let the peas cook until they soften.

Meanwhile, in a clean bowl, prepare the sauce by whisking together the egg, egg yolks, and grated Parmesan cheese. Season the mixture to taste with freshly ground pepper.

Once the pasta is cooked, transfer it directly from the pot to the pan with the sauce. Mix everything well.

Remove the pan from the heat and pour the egg mixture over the pasta. Quickly and thoroughly mix everything so that the sauce coats the pasta nicely. If needed, add a bit of the reserved pasta cooking water to achieve a shiny and creamy sauce.

Serve the prepared pasta on plates, sprinkle with freshly grated Parmesan cheese, and serve immediately.
