Pasta Salad
A refreshing picnic salad, full of goodness, that you can prepare with any type of pasta. We chose penne pasta, which, together with zucchini, cherry tomatoes, artichokes, olives, and feta cheese, takes you to sunny Greece. Double the ingredients for larger gatherings.

Ingredients

200 g Pasta, Macaroni, whole grain

50 ml Oil, olive

4 pods Garlic, fresh

400 g Small pumpkins

200 g Tomato, red

0.5 spoons Spices, oregano, dried

0.5 spoons Thyme, fresh

0.5 teaspoons Salt, table

200 g Artichoke

1 handful Olives, black, in brine

150 g Cheese, feta

Cook the pasta according to the instructions on the package, then drain it and transfer it to a large bowl. If you want to prevent the pasta from sticking together while cooling, you can drizzle it with a little olive oil and mix well.

Clean and wash the vegetables. Cut the zucchini lengthwise into quarters, then slice each piece into slightly thicker slices. Halve the cherry tomatoes, do the same with the olives, and cut larger artichoke hearts into bite-sized pieces. Finely chop the garlic and herbs.

Pour olive oil into a pan and sauté the garlic on low heat for three minutes. Then add the zucchini and sauté on medium heat for another three minutes. Finally, add the tomatoes, herbs, salt, and pepper, and sauté everything together for just one more minute.

Transfer the vegetables to the bowl with the pasta. Add the artichokes, olives, grated lemon zest, and juice of half a lemon. Crumble the feta cheese into the bowl and mix all the ingredients well.

The pasta salad can be served warm or completely cooled. If desired, drizzle it with a little more olive oil.
