Pasta Salad with Vegetables, Feta Cheese, and Black Olives
A hearty salad made with pasta, green lettuce, tomatoes, feta cheese, and black olives, which is quick to prepare and can be served as a standalone and complete meal.

250 g Tomato, red

100 g Cheese, feta

100 g Olives, black, in brine

2 spoons Juice, lemon

Steps

Bring 2.5 liters of water to a boil, adding two tablespoons of salt. When the water boils, add the pasta, stir it a few times, and cover the pot with a lid. When the water boils again, uncover the pot. The water should simmer gently throughout the cooking time. Stir the pasta several times during cooking. After five minutes, check if it is cooked, otherwise extend the cooking time.

Drain the pasta in a large colander and shake it several times while draining to remove all the water. Transfer it to a large salad bowl and let it cool.

Clean the lettuce leaves, wash them thoroughly, drain, and tear them into pieces. Wash the tomatoes, dry them, and cut them into halves. Cut the feta cheese into centimeter-sized pieces. Drain the olives.

Add all the ingredients to the cooled pasta and mix.

In a small bowl, prepare the dressing with lemon juice, mustard, salt, pressed garlic, and oil.

Pour the dressing over the salad, mix, and serve on plates.

Advice
The pasta salad will be even more interesting if instead of regular pasta, we choose colored pasta, dyed with tomato or spinach. Pasta continues to cook as long as it is surrounded by water, so we drain it thoroughly, otherwise it can become overcooked, and the water in it will dilute the sauce or dressing that we will add to the pasta later. It is not necessary to rinse the pasta with cold water while draining. Immediately after draining, we can mix a piece of butter into the pasta. This way, we prevent the cooked pasta from sticking together.
