Pasta with Baked Feta
A popular recipe that delights pasta lovers and quick meal enthusiasts. You only need a few familiar ingredients, and the best part is that preparing this delicious dish will require very little effort. While baking in the oven, the feta and cherry tomatoes will create a very tasty, creamy sauce that you simply need to mix with cooked pasta, to which you’ve added some spinach for color and an extra dose of vitamins.

500 g Tomato, red

Preheat the oven to 200 degrees Celsius. Wash the cherry tomatoes and cut them in half. If they are smaller, you can leave them whole. Peel the garlic and roughly chop or slice it.

Take a baking dish and first add the cherry tomatoes, lightly salt them, and sprinkle with garlic. Drizzle with olive oil, then move the tomatoes slightly to the side in the center of the dish to make space for the feta cheese. Also, drizzle the feta with a little oil.

Place the baking dish with the feta and tomatoes in the preheated oven for 30 minutes. First, bake the ingredients on the middle rack, then after half an hour, remove the dish from the oven and set the rack to the upper third. Increase the temperature to 220 degrees Celsius and bake the ingredients until the tomatoes soften and the feta gets a delicate golden brown color (about 10 to 15 minutes).

Meanwhile, bring a large pot of salted water to a boil for cooking the pasta. Once the water is boiling, add the pasta and cook it for the time indicated on the package.

Clean and wash the baby spinach if needed. Add it to the pot with the pasta during the last minute of cooking, so the spinach wilts and softens.

Just before draining the pasta and spinach, reserve about 150 ml of the cooking liquid in a cup.

Once the ingredients are ready, remove the baking dish from the oven. Use a spoon to slightly mash the tomatoes and feta, then mix all the ingredients to create a sauce. Combine the sauce with the drained pasta and spinach. If needed, add the reserved pasta water and season with salt and ground pepper to taste.

Serve the prepared pasta on plates and enjoy while it’s still warm.
