Pasta with Baked Salmon Sauce

250 g Fish, salmon

1 handful Tomato, red

200 g Cheese, feta

50 g Spinach, raw

Season the salmon fillets with pepper and salt, then place them in a baking dish. Add feta cheese, halved cherry tomatoes, and washed spinach to the dish. Lightly season the vegetables with salt, and if desired, sprinkle some ground or crushed chili over the feta. Drizzle everything with olive oil.

Place the baking dish in the oven preheated to 200°C (392°F) for about 30 minutes. For the last 10 minutes, increase the temperature to 220°C (428°F).

Meanwhile, bring a large pot of salted water to a boil. Once the water is boiling, add the pasta and cook it for the time indicated on the package.

Just before draining the pasta, reserve about 150 ml of the cooking liquid in a bowl.

Once the ingredients are ready, remove the baking dish from the oven. Use a spoon to slightly mash the tomatoes, salmon fillets, and feta, then mix the ingredients to create a thick and creamy sauce.

Mix the drained pasta into the sauce. If needed, add the reserved pasta cooking water, and finally season with salt and ground pepper to taste. Serve the prepared pasta on plates and enjoy while it's still warm.
