Pasta with Beans
Pasta with beans is a popular coastal dish, served with a slice of homemade bread. We hardly need anything else, as this bean stew is a very filling meal.

Ingredients

300 g Pasta, Macaroni

500 g Beans, grains

1 piece Meat, beef, dried beef

2 piece Spices, bay (leaves)

4 spoon Oil, vegetable oil, canola

1 piece Onion, raw

2 teaspoons Spices, paprika

2 piece Carrot, fresh

1 piece Green, raw

4 pods Garlic, fresh

250 g Tomato, pieces - can

Drain the soaked beans, transfer them to a large pot, and cover with a generous amount of cold water. The water should be at least three fingers above the beans. Place the pot on the stove and wait for the water to boil. Once the water boils, drain the beans. Cover the beans again with an appropriate amount of cold water and place the pot back on the stove. Add a piece of pancetta (cured meat) and bay leaves to the pot. Cook for about 1 hour or until the beans are completely tender.

Peel and wash the carrots and celery (peel the carrots if necessary) and cut them into smaller pieces. Peel and finely chop the onion and garlic. Dice the canned tomatoes.

Heat oil in a pan and slowly sauté the chopped onion. Stir it until it softens and becomes translucent. Sprinkle the onion with paprika and mix well. Then add the garlic, carrots, and celery to the pan. Sauté until the garlic becomes fragrant, then add the diced tomatoes. Simmer the vegetables over moderate heat for about 20 minutes until they soften. Add water from the cooked beans as needed.

While the vegetables are simmering, cook the pasta. Bring a large pot of salted water to a boil. Once the water boils, add the pasta and cook for the time indicated on the package. Drain the cooked pasta.

Mash a portion of the cooked beans and add them to the pan with the vegetables. Mix well, then add the mixture to the pot with the beans. Taste the dish and season with pepper and salt as needed. Cook for another 15 minutes. Finally, stir in the cooked pasta.

Serve the prepared dish in soup bowls and offer it with a slice of homemade bread.

Advice
When cooking pasta, follow the rule of using 1 liter of water for every 100 grams of pasta. Add 10 to 12 grams of salt per liter of water. If desired, you can also cook the beans with a piece of dried meat (e.g., prosciutto, dried pork ribs). Instead of canned tomatoes, you can also use fresh tomatoes.
