Pasta with Chicken
Pasta with chicken, spinach, and tomatoes combines several qualities: its filling, easy to digest, and just creamy enough. Thats why its a perfect summer dish.

Ingredients

400 g Pasta, Macaroni

250 g Meat, chicken, breasts

100 g Spinach, raw

10 pieces Tomato, red

1.5 dl Soup base, chicken, cube

1.5 dl Sweet cream

2 spoons Oil, olive

0.5 teaspoons Salt, table

3 pinch Spices, pepper, black

30 g Cheese, Parmesan, hard
Steps

Rinse the chicken breasts under running water and pat them dry with kitchen towels. Season both sides with salt and freshly ground pepper. Wash the tomatoes and cut them in half. Clean the young spinach leaves, wash them, and dry them thoroughly.

Place a large pot with the appropriate amount of water for cooking the pasta on the stove. Just before the water boils, salt it, then add the pasta. Cook it for the time indicated on the package.

While the pasta is cooking, heat olive oil in a pan. Sear the chicken breasts on both sides in the hot oil. Transfer the cooked chicken to a warmed plate and cover it to keep it warm.

Add the cherry tomatoes to the pan and quickly sauté them over high heat. Transfer the sautéed tomatoes to a plate.

Pour the chicken broth into the pan. Use a spatula to scrape the bottom well to remove all the caramelized bits left from cooking the meat. When the chicken broth comes to a boil, reduce the heat and add the cream. Drain the cooked pasta well. Add the drained pasta to the pan and mix it well with the sauce. Season with additional pepper and salt to taste.

Transfer the pasta to a large bowl. Slice the cooked chicken breasts into 1 cm thick strips. Arrange the spinach leaves, cherry tomatoes, and chicken strips over the pasta. Grate Parmesan cheese on top.

Serve the prepared dish directly in the bowl.
