Pasta with Lentils and Carrots

Ingredients

2 spoons Oil, olive

1 piece Onion, raw

2 piece Carrot, fresh

0.5 cups Lentils, raw

2 pod Garlic, fresh

2 spoons Tomato, concentrate

0.5 teaspoons Spices, thyme, dried

1 piece Spices, bay (leaves)

400 g Pasta, Macaroni

Peel the garlic and onion, and chop them finely separately. Wash the carrot and cut it into smaller pieces. Place the lentils in a sieve and rinse them under cold water. Drain the rinsed lentils.

Heat oil in a pot and first sauté the onion and carrot until the vegetables soften slightly. Add the rinsed lentils and stir-fry everything together for 1-2 minutes. Then add the tomato paste and garlic, and continue to stir-fry for another 2 minutes.

Pour a cup of water (or broth) into the pot. Add the bay leaf, thyme, and pepper to taste. Mix well and let the sauce simmer covered over moderate heat for 30-40 minutes. Stir occasionally and add water as needed. Once the lentils are tender, season the sauce with salt.

When the sauce is ready, bring a large pot of salted water to a boil. Add the pasta and cook it for the time indicated on the package.

Just before draining the pasta, add half a cup of the pasta cooking water to the pot with the sauce. Finally, add the drained pasta to the pot and mix everything well.

Serve the prepared dish on plates. Garnish with Parmesan or a vegan alternative.
