Pasta with Pumpkin and Bacon

400 g Pasta, Macaroni

500 g Pumpkin, raw

150 g Meat, pork, smoked bacon

1 piece Onion, raw

1 spoon Butter, unsalted

3 spoons Oil, olive

0.7 dl Alcohol, Wine, White

2 pinch Salt, table

2 pinch Spices, pepper, black

pieces Cheese, Parmesan, grated
Steps

Wash the pumpkin, peel it, remove the seeds and the stringy membrane. Cut the pumpkin flesh into small cubes. Also, cut the bacon into small cubes. Peel the onion and finely chop it.

Place a large pot with an appropriate amount of water for cooking the pasta on the stove. Just before the water boils, salt it, then add the pasta. Cook it for the time indicated on the package.

Heat butter and oil in a pan. Sauté the onion in the fat until it becomes translucent. Add the pumpkin and bacon, and fry while stirring for another three to four minutes until the bacon pieces become crispy. Pour in the white wine and simmer on moderate heat until the pumpkin softens. Season with pepper and salt to taste.

Drain the cooked pasta well and add it to the pan with the sauce. Remove from heat, mix well, and serve on plates. If desired, sprinkle the prepared pasta with grated Parmesan cheese and serve.

Advice
When cooking pasta, follow the rule of using 1 liter of water for every 100 grams of pasta. Add 10 to 12 grams of salt per liter of water. If desired, add fresh herbs to the sauce. Rosemary and thyme work exceptionally well.
