Pasta with Salmon, Asparagus, and Cream

300 g Pasta, Macaroni

1 spoon Oil, olive

600 g Fish, salmon

2 spoons Butter, unsalted

1 bouquet Asparagus, fresh

2 teaspoons Lemon zest, fresh

300 ml Sweet cream

Steps

Place a large pot of water for cooking pasta on the stove. Just before the water boils, add salt, then add the pasta and cook it 'al dente' or 'to the tooth'. Drain the cooked pasta.

Meanwhile, rinse the salmon fillets and pat them dry with paper towels. Wash the asparagus and trim or snap off the woody ends (they can be used for making soup or stock). Cut off the tips and set them aside for later, then slice the stalks into approximately 3 cm pieces. Finely chop the spring onion.

Place a large pan on the stove, grease it with a little oil, and heat it well. Add the salmon fillets and cook them for about 4 minutes on each side (adjust as needed). Season the fillets lightly with salt and pepper while cooking. Remove the cooked fillets to a plate and let them cool slightly.

Pour off any excess fat from the pan used to cook the salmon, leaving about half a tablespoon. Add a tablespoon of butter, the chopped onion, and the sliced asparagus. Sauté everything for about 2 minutes, stirring constantly, then add the lemon zest and pour in the cream. Season the sauce to taste with salt and pepper.

Once the sauce comes to a boil, add the cooked pasta. Mix well and let the pasta heat through in the sauce.

Meanwhile, melt the remaining butter (or heat oil) in another pan and sauté the asparagus tips. Break the salmon fillets into pieces and gently mix them into the sauce along with the lemon juice.

Serve the prepared pasta immediately on plates. Garnish with the asparagus tips and serve. A bowl of green salad pairs well with this dish.
