Pasta with Sausage and Tomato

Ingredients

1 spoon Oil, olive

4 pieces Carniolan sausage

1 piece Onion, raw

2 pod Garlic, fresh

200 ml Alcohol, Wine, White

400 g Tomato sauce, without salt

pieces Parsley, fresh

500 g Pasta, Macaroni
Steps

Peel the onion and garlic, then finely chop them separately. Cut the sausages into medium-thick slices. Rinse the parsley sprigs under running water, shake them dry, and chop them finely.

Heat olive oil in a deep pan. Add the sliced sausages and fry them over medium heat, stirring occasionally, for 8 minutes or until the slices are nicely browned on both sides. Remove the fried sausage slices from the pan and set them aside on a plate.

Add the onion to the pan and fry until translucent. Then add the garlic and fry together with the onion for 1 minute to release the aroma. Pour in the wine and use a spatula to scrape the bottom of the pan to loosen any caramelized bits that formed during frying. Let half of the wine evaporate, then add the strained tomatoes to the pan. Add the fried sausage slices, mix well, and let the sauce simmer over medium heat (gentle bubbling) for 15 minutes.

While the sauce is cooking, bring a large pot of water to a boil for the pasta. Just before the water boils, add salt to increase the boiling intensity. Add the pasta to the salted boiling water and cook according to the manufacturer's instructions.

Stir half of the chopped parsley into the prepared sauce, and season it further with pepper and/or salt if desired. Drain the cooked pasta well and add it to the pan with the sauce. Mix thoroughly to evenly coat the pasta with the sauce, then serve on plates, sprinkle with the remaining parsley, and enjoy.
