Pasta with Squid in Spicy Tomato Sauce
A simple yet very tasty dish, suitable for any day of the week and all seasons. It pairs excellently with a glass of white wine.

3 spoons Oil, olive

pieces Fish, salt, in brine

900 g Fish, squid

2 pod Garlic, fresh

pieces Chili peppers, red chili, dried

700 g Tomato sauce, without salt

pieces Spices, oregano, dried

450 g Pasta, Macaroni

1 handful Parsley, fresh
Steps

Rinse the squid tubes thoroughly under running water and dry them with paper towels. Cut them into approximately 1 cm wide rings. Peel the garlic and finely chop it. Crush the dried chili or chop it into pieces. If you like spicy dishes, do not discard the seeds.

Heat a deep pan well, then add oil. Add the anchovies and quickly sauté them until they dissolve. Add the sliced squid and continue to sauté. The squid will release some liquid, so you can increase the heat slightly.

When the squid starts to color and there is no excess liquid left in the pan, add the garlic and chili and sauté them together with the squid until the garlic becomes fragrant. Then add the tomatoes and dried herbs. Pour in a little water and season the sauce with pepper and salt to taste.

Cover the pan and let the sauce simmer gently for 25 minutes. Add more water if needed.

Meanwhile, bring a large pot of salted water to a boil. Add the chosen pasta and cook it for 2 minutes less than the time indicated on the package.

Drain the pasta after the cooking time and add it to the pan with the sauce. Cook everything together while stirring for another 2 minutes or until the pasta is properly cooked. Finally, sprinkle the prepared dish with chopped parsley.
