Ingredients

500 g Pasta, noodles, fresh

20 g Mushrooms, shiitake, fresh

200 ml Milk, partially skimmed

2 spoons Butter, salted

100 ml Sweet cream

2 piece Egg, egg yolk, fresh

20 g Cheese, Parmesan, grated

3 l Water

0.5 teaspoons Salt, table
Steps

Place a large pot with about three liters of water on the stove. Salt the water (with half a teaspoon of salt) and add a tablespoon of olive oil. Wait for it to boil, then cook the pasta in it. Follow the instructions on the package and cook for exactly the indicated time.

Drain the cooked pasta and rinse it with warm water. Return it to the pot and add another tablespoon of olive oil, then mix well.

Grate the truffles using a grater. Place a pan on the stove and heat two tablespoons of butter. Wait for it to melt, then add half of the truffles. Sauté them for a few minutes, then add milk, sweet cream, and a pinch of salt. Cook until the sauce boils.

Separate the egg yolk from the egg white. Discard the egg white and add the yolk to the sauce. Cook on medium heat for a few more minutes and mix thoroughly to ensure the yolk is evenly incorporated into the sauce.

Pour the sauce over the pasta, mix well, and serve in bowls. Sprinkle with the remaining grated truffles and Parmesan cheese.
