Ingredients
-
3 spoons Oil, olive
-
2 piece Shallot
-
2 pod Garlic, fresh
-
3 spoons Tomato, concentrate
-
4 spoon Alcohol, Vodka
-
200 ml Sweet cream
-
pieces Spices, chili powder
-
pieces Salt, table
-
60 g Cheese, Parmesan, grated
-
400 g Pasta, Macaroni
Steps
-
Place a pot with a generous amount of salted water on the stove to cook the pasta. Add the chosen ingredients to the boiling water and cook them until they are al dente (firm to the bite). Follow the manufacturer's recommendations for cooking time.
-
Meanwhile, prepare the sauce. Peel the garlic and shallot, then finely chop them separately.
-
Heat olive oil in a large pan. First, sauté the shallot, then add the garlic and continue to cook until the garlic becomes fragrant. Stir in the tomato paste and cook until it darkens slightly in color.
-
Pour the vodka into the pan and use a spatula to scrape the bottom, releasing all the caramelized bits that formed during sautéing. Be careful not to let all the vodka evaporate. Add the cream and season the sauce with chili, salt, and pepper. Mix well.
-
Stir the grated Parmesan into the sauce, reserving some for serving the final dish. Finally, add the drained pasta along with about 50 ml of the pasta cooking water. Mix well to ensure the pasta and sauce combine beautifully.
