Pasta with Zucchini and Pine Nuts in One Pan
A delicious dish with pasta and zucchini is prepared in one pan, making it suitable for smaller kitchens. Since its cooked in less than half an hour, its also an excellent choice for days when you dont feel like cooking.

1 handful Pine nuts

700 ml Soup base, chicken, cube

340 g Pasta, Macaroni

2 piece Small pumpkins

120 g Cheese, creamy

1 pod Garlic, fresh

1 handful Basil, fresh

Steps

Clean and wash the zucchini. Cut them into cubes, slices, or half-moons - however you prefer. Peel and finely chop the garlic, and slice or roughly chop the basil.

Place a large deep pan on the stove and dry-roast the pine nuts. Once they turn slightly brown, transfer them to a plate and let them cool.

Pour the broth into the pan and bring it to a boil. Add the pasta, zucchini, mascarpone, garlic, and half of the basil to the boiling liquid. Mix everything well and season with salt and freshly ground pepper to taste. Reduce the heat so that the liquid simmers gently, then cook the dish, stirring occasionally, until the pasta is cooked and the liquid has reduced to a sauce (about 12 to 15 minutes). If the sauce thickens too much, add a little water during the last few minutes of cooking.

Remove the pan from the heat and stir in the remaining basil and toasted pine nuts. Serve the pasta on plates, sprinkle with grated cheese, and enjoy.
