Pavlova Cake with Cherries and Chocolate
First, we spread whipped cream on the baked meringue base. Then, we add soaked cherries and grate a little chocolate on top. The final product is a delightful dessert that will enchant you with its appearance and convince you with its excellent taste.

Preheat the oven to 170 degrees Celsius. On a piece of parchment paper, draw a circle with a diameter of 20 cm using a pencil. Place the parchment paper on a low baking tray.

Beat the egg whites with an electric mixer until stiff peaks form. Continue mixing and slowly add the sugar (spoon by spoon). Once all the sugar is added, mix for another 2 to 3 minutes until the meringue is firm and glossy. Gently and slowly fold in the cornstarch with a spatula, then add the vinegar and cherry brandy, and gently mix one last time.

Fill the circle drawn on the parchment paper with the meringue mixture. Use a spatula to pull the mixture upwards at the edges to create the sides of the cake. Make a well in the center where we will place the sweet cream. Ensure that the layer of meringue mixture at the bottom is thick enough.

Reduce the oven temperature to 100 degrees Celsius. Bake the meringue base for 1.5 hours, then turn off the oven, slightly open the door, and let the meringue base cool slowly in the turned-off oven (this takes about 4 to 5 hours).

While waiting for the meringue base to cool, prepare the cherries. First, drain them well, saving one tablespoon of the fruit juice. Place the drained cherries in a bowl and pour the saved juice and cherry brandy over them.

Lightly whip the sweet cream together with powdered sugar. Take the cooled meringue base out of the oven and place it on a nice plate or platter. Place the whipped cream in the center. Arrange the cherries over the cream. Grate a little chocolate on top, then drizzle the dessert with the mixture of brandy and fruit juice. Serve the prepared dessert immediately.
