Pavlova with Bananas and Caramel Sauce

Ingredients

6 pieces Egg, egg white, fresh

300 g Sugar, white

2 teaspoons Koruzni škrob

1 teaspoon Vinegar, distilled

100 g Butter, unsalted

300 g Sugar, brown

800 ml Sweet cream

2 piece Banana, fresh

1 handful Walnuts
Steps

Preheat the oven to 180 degrees Celsius. Draw a circle with a diameter of 25 cm on a piece of parchment paper. Place the parchment paper on a low baking tray.

Beat the egg whites with an electric mixer until stiff peaks form. Continue mixing and slowly add the sugar (spoon by spoon). Once all the sugar is added, mix for another 2 to 3 minutes until the meringue is firm and glossy. Gently and slowly fold in the cornstarch with a spatula, then add the vinegar and gently mix one last time.

Fill the circle drawn on the parchment paper with the meringue mixture. Pile the mixture in large mounds around the edge of the circle to create a thick border. The center of the cake should have less mixture to create a hollow where the cream will be placed. Make sure the layer of meringue at the bottom is thick enough.

Reduce the oven temperature to 150 degrees Celsius. Bake the meringue base in the preheated oven for 1 hour, then turn off the oven, open the door, and let the meringue base cool slowly in the turned-off oven.

To prepare the caramel sauce, mix sugar, butter, and 400 ml of sweet cream in a saucepan. Place the saucepan on the stove and slowly heat the mixture over medium heat. Stir until the sauce comes to a boil, then reduce the heat and let it simmer gently for about 4 minutes until it thickens and turns a golden brown color.

Whip the remaining cream with an electric mixer. Coarsely chop the walnuts, peel the bananas, and slice them into rounds. Take the cooled meringue base out of the oven and place it on a nice plate or platter. Fill the hollow with the whipped cream, then arrange the banana slices on top. Drizzle the caramel sauce over the bananas, cream, and meringue base. Finally, sprinkle the chopped walnuts over the cake and serve the prepared dessert.

Advice
