Pea and Mint Soup

Ingredients

500 g Beans, fresh

2 handfuls Mint

4 pods Garlic, fresh

4 spoon Oil, plant, coconut

3 pinch Salt, table

2 pinch Spices, pepper, black

2 slices Bread, wheat

0.5 dl Sweet cream

2 spoons Milk, partially skimmed

2 spoons Butter, unsalted
Steps

Wash the mint leaves and place a handful of leaves into a multipractic. Peel the garlic and add it along with the peas into the multipractic. Blend everything into a smooth paste.

Melt the coconut oil in a larger pot. Quickly sauté the mixture from the multipractic in the oil, add water, and salt to taste. Initially, the soup is not creamy, so cook it on moderate heat for 25 minutes to soften the ingredients and let some water evaporate. Meanwhile, finely chop the mint leaves and mix them into the soup along with the cream. Stir the soup well and adjust the seasoning with salt and pepper.

Cut the bread into cubes and place them in a bowl. Drizzle the bread with a little milk to moisten it and season with salt and pepper. Mix everything well. Melt butter in a pan and sauté the bread cubes while stirring. When the cubes turn brown, remove the pan from the heat and let the cubes cool.

Serve the prepared soup in soup bowls and garnish with the prepared bread cubes.

Advice
Instead of cooking cream, you can also use sour cream if desired. You can also add a little grated lemon zest to the soup.
