Ingredients

250 g Beans, fresh

70 g Butter, unsalted

Pour the peas into a larger container and cover them with double the amount of water. Cover the container and let the peas soak for at least 24 hours. The next day, thoroughly drain the peas and then transfer them to a larger pot.

Pour 0.75 liters of water over the peas and add half a teaspoon of salt. First, wait for the peas to come to a boil, then cover the pot and cook on moderate heat for another hour. Press the peas through a fine sieve into a clean bowl. Then mix in 50 grams of butter and a pinch of marjoram.

Cook on very low heat for another 5 minutes, stirring occasionally. Serve in a special bowl, optionally garnished with pea leaves and pea grains, and offer as a side dish.
