Peach and Sour Cream Pie
Pie is undoubtedly one of those desserts that you simply cant go wrong with. Its true that preparing it requires a bit more time than, for example, making a quick cake in a jar, but all the time and effort invested are richly rewarded when we place the pie on the table and, of course, taste it. The combination of flaky dough, juicy filling, and fruit is exceptional, which is why its no surprise that pie ranks among the most popular desserts. Instead of peaches, you can use apricots, plums, rhubarb, apples, or pears, and fresh fruit can be replaced with fruit from compote when out of season.

Dough

250 g Flour, Wheat, bread flour

40 g Powdered sugar

1 pinch Salt, table

115 g Butter, unsalted

1 piece Egg, egg yolk, fresh

2 spoons Water
Filling

800 g Peach, fresh

2 piece Egg, fresh

50 g Wheat flour, white, multi-purpose

120 g Sugar, white

250 ml Sour cream

0.25 teaspoons Baking powder

First, prepare the flaky dough. Sift the flour into a bowl and mix it with sifted baking powder, sugar, and salt. Add the cold butter, cut into pieces, to the mixture. Use your fingertips to rub the fat into the dry ingredients, lifting the mixture to make it airy and crumbly. Add the egg yolk and cold water, and with cold hands, knead everything into a dough. Line the bottom and sides of a baking dish (24 cm in diameter) with the dough. Make sure the dough is as evenly thick as possible on the bottom, and shape the edge of the pie to reach about halfway up the dish. Cover the dish with the dough with plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 180 degrees Celsius. Wash the peaches and halve them. Slice the halves. In a bowl, whisk the eggs. Mix in the flour and sugar, and finally add the sour cream.

Take the baking dish out of the refrigerator and prick the dough in several places with a fork. Arrange the sliced peaches over the dough and pour the cream mixture over them. Bake the pie in the preheated oven for 30 to 40 minutes, or until the filling and dough are nicely golden brown.

Remove the baked pie from the oven and let it cool in the dish for about 15 minutes, then transfer it to a serving plate or platter. Serve warm or cold with a scoop of vanilla ice cream or whipped cream.
