Steps

Place a pot of water on the stove and wait for it to boil. Submerge the peaches in the boiling water for 30 seconds, then drain, cool, and peel them. Cut the peeled peaches into slices.

Preheat the oven to 200 degrees Celsius. Grease a small baking dish well with butter. Place the peach slices in the dish and sprinkle them with brown sugar, cinnamon, vanilla sugar, and flour. Gently mix everything together and spread it evenly in the dish. Place the dish in the preheated oven for 10 minutes.

In a bowl, mix the flour, baking soda, baking powder, and sugar. Add the butter pieces and rub the mixture with your fingertips until it resembles crumbs. Add the buttermilk and mix well with a hand whisk to form a dough.

Remove the dish with the peaches from the oven. Spoon dollops of the dough over the peaches. Sprinkle the dough and peaches with brown sugar and bake in the oven for about 20 more minutes.

Serve the warm cobbler with ice cream or whipped cream.
