Peach Compote
Peach compote is versatile. It can be enjoyed straight from the jar or served with whipped cream or a scoop of ice cream. And thats not all. It can also be used to prepare many juicy and delicious homemade desserts.

Ingredients

3 kg Peach, fresh

400 g Sugar, white
Steps

Place a pot of water on the stove and wait for it to boil. Submerge the peaches in the boiling water for 20 seconds, then drain, cool, and peel them. Peeled peaches are halved and pitted. Halves can be sliced into wedges if desired.

Place the pot used for blanching the peaches back on the stove. Add 1.5 liters of water and sugar to the pot and wait for the mixture to boil. Once the mixture boils, remove the pot from the heat and let it cool.

Fill cleaned jars with the peaches. Pour the sweet water over the peaches (fill the jars to the top). Seal the jars tightly. Place a cloth at the bottom of a wide and shallow pot. Place the jars with the compote on the cloth and add water between them.

Place the pot with the jars on the stove, wait for the water to boil, and cook for another 15 minutes. After fifteen minutes, remove the pot from the heat and let the compote cool in the pot with water.

Store the jars with the compote in a cool, dry, and dark place until ready to use.

Advice
If desired, you can also add a few cloves, a piece of cinnamon stick, or lemon zest to the jars. For cooking, the best varieties are firm peaches.
