Peanut Cookies

Ingredients

75 g Peanuts, roasted without oil, unsalted

200 g Flour, Wheat, bread flour

0.5 teaspoons Baking powder

100 g Butter, unsalted

75 g Sugar, brown

1 piece Egg, fresh

1 teaspoon Vanilla, extract, natural
Steps

Place the peanuts in a food processor and grind them very finely. Save two handfuls of peanuts, as we will later sprinkle them on the cookies. Preheat the oven to 180 °C. Sift the flour and baking soda into a large bowl and add the cubed butter. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs. Add the sugar and ground peanuts.

Beat the vanilla extract and egg well with a whisk and pour into the bowl. Knead all the ingredients thoroughly with your hands to form a smooth dough. Grease a baking tray with margarine and dust with flour or line with baking paper. Shape the dough into about 20 balls and place them on the baking tray. Flatten the balls with a spoon to form round cookies, then sprinkle with the reserved peanuts. Place the tray in the preheated oven for 12 minutes.

When the cookies turn golden brown, remove them from the oven and let them cool on a wire rack. Serve them on a platter and offer them to your guests.

Advice
Peanuts can be bought in shells or already shelled. If you buy shelled ones, be sure to check the expiration date, as they lose their flavor very quickly. Instead of muscovado sugar, you can also use fructose or maple syrup.
