Pear Cake with Almonds

Steps

Preheat the oven to 180 degrees Celsius. Line a round baking dish (or a 20 cm diameter cake pan) with baking paper. Wash and peel the pears. Cut them into quarters and remove the stems and cores. Cut the quarters into smaller pieces and drizzle them with the juice of half a lemon.

Sift the flour into a bowl and mix it with ground almonds and baking powder. In another bowl, use an electric mixer to combine the softened butter and sugar. Mix on high speed for 4 to 5 minutes until you get a slightly creamy mixture. Gradually (one by one) add the eggs (mixing each for about half a minute). Then add half of the flour, baking powder, and almond mixture and slowly mix it into the egg mixture on low speed. Repeat the same process with the other half. Finally, fold in the pear pieces with a spoon or spatula.

Pour the batter into the baking dish and gently shake it to evenly distribute the batter. Sprinkle almond flakes on top. Finally, sprinkle everything with one tablespoon of sugar. Place the dish in the preheated oven for about 30 minutes. The cake is done when a toothpick inserted into the batter comes out clean.

Remove the baked cake from the oven and let it cool in the dish for about 10 minutes. Then remove the baking paper and serve the cake on a plate. Cut the warm or cooled cake into pieces of your desired size, serve on plates, and accompany with whipped cream or ice cream.

Advice
The butter is easiest to soften by taking it out of the fridge at least one hour before preparation and letting it sit at room temperature.
