Pear Cake with Ginger

Steps

Place a heavy-bottomed pan on the stove and add a piece of butter. Heat it over medium heat for 6 to 8 minutes, stirring occasionally. Then remove the pan from the heat.

Preheat the oven to 190°C. Set the rack to the middle position. Wash the pears, dry them, and slice them into chunks. Remove the stems and cores. Arrange the pear chunks in a rectangular baking dish, sprinkle with 1/4 cup of brown sugar, and drizzle with 3 tablespoons of melted butter. Place the dish in the preheated oven for 20 minutes. During baking, baste the pears a few times with the juice that collects in the dish. After 20 minutes, remove the dish from the oven and let the pears cool.

Reduce the oven temperature to 175°C. Grease and lightly flour a round baking dish with a diameter of 22 cm.

In a large bowl, mix both flours, baking powder, salt, ground ginger, coffee, cinnamon, and cloves. In another bowl, beat the remaining sugar and eggs with an electric mixer or whisk until frothy, about 3 minutes. In a medium bowl, mix the melted butter, molasses, and grated ginger. Combine the egg mixture with the dry ingredients, then add the butter mixture and mix until uniform. Pour the batter into the round baking dish. Arrange the baked pear chunks on top and drizzle with the juice from the baking dish.

Bake the cake in the preheated oven for 45 to 55 minutes, or until the cake is golden brown and springy. Remove the baked cake from the oven, transfer it to a rack, and let it cool completely. Slice and serve.

Advice
Since pears ripen very quickly, its best to buy them just a few days before use. Optionally, you can sprinkle the baked cake with pieces of candied ginger.
