Pear Jam with Vanilla
Probably no need to explain, but pear jam with vanilla is truly divine. It’s true that you’ll spend a bit more time preparing it, but your effort will be richly rewarded when you spread this wonderful jam on bread or pancakes.

Ingredients

2 piece Vanilla, extract, imitation

400 ml Juice, lemon

1.85 kg Pear, fresh

750 g Apples, rose

1 kg Sugar, white
Steps

Wash the apples and pears, peel them, and cut them into quarters, removing the stems and cores. Cut the fruit into 1.5 cm cubes.

Split the vanilla beans lengthwise. Scrape out the seeds with the tip of a knife, add them to a bowl, and mix with about 100 ml of lemon juice.

Place a large, thick-bottomed pot on the stove and add the pears, lemon juice with vanilla seeds, the split vanilla beans, and 570 ml of water. Cover the pot and cook the pears on low heat for 35 minutes, stirring well several times during cooking.

After 35 minutes, add the apples to the pot. Cook the fruit for another 10 minutes, stirring occasionally.

Uncover the pot, add the sugar, and increase the heat to bring the mixture to a boil. Cook for 35 minutes, stirring, until it thickens and begins to gel. Finally, pour in the remaining lemon juice and cook the jam for another 5 minutes or until the temperature reaches 104 degrees Celsius.

Remove the pot from the heat and let the jam rest for 10 minutes so the fruit distributes evenly. Just before adding it to hot jars, remove the vanilla beans.

Fill the warm jars with the hot jam, leaving a finger-width space below the rim. Seal them tightly, cover with a blanket, and let them cool slowly.
