Pear Mousse with Chocolate Crumble and Sivka Cream

Pear mousse

100 g Butter, unsalted

90 g Powdered sugar

80 g Wheat flour, white, multi-purpose

30 g Cocoa, powdered, unsweetened

Chocolate Crumble: Mix butter, powdered sugar, flour, cocoa powder, and almond flour in a multiprocessor until it just holds together. Then take the mixture in your hands, crumble it onto baking paper, and bake in a preheated oven at 160°C for 15 minutes until nicely browned. Remove from the oven and let it cool.

Sivka Cream: Add dried Sivka to the cream and slowly bring to a boil. Remove from heat, cover, and let it steep for a few minutes to release all the aromas. Strain the cream and mix in butter and honey. Heat again but do not boil, then pour over the chocolate. Let the mixture cool. Whip the cream separately and fold it into the cooled chocolate cream.

Pear Mousse: Peel and dice the pears. Add agar and vanilla seeds, blend well with a hand blender, and heat to 60°C. Remove from heat and let the mixture cool slightly. Meanwhile, whip the cream and fold in the pears, ensuring they don't clump. Chill the mousse and serve it cold.
