Pear Sorbet with Ginger

90 g Sugar, white

300 ml Water

20 ml Juice, lemon

750 g Pear, fresh

1 teaspoon Spices, ginger, ground

2 piece Egg, egg white, fresh

Wash the pears, peel them, remove the cores, and cut them in half. In a pot, combine sugar, lemon juice, and water. Heat the mixture slowly over low heat until the sugar is completely dissolved. Add the pears to the mixture. Cook over moderate heat for 25 minutes until the pears soften. Stir the pears occasionally during cooking. Remove the pot from the heat and let it cool. Then blend the mixture with an immersion blender.

Add ginger to the pear puree, mix well, and pour into a freezer-safe container. Place it in the freezer for two hours. After freezing, transfer the mixture to a larger bowl and whisk it to break up any large ice crystals.

Beat the egg whites into stiff peaks and gently fold them into the pear sorbet. Pour the mixture back into the freezer-safe container and return it to the freezer until the sorbet is completely firm.

Half an hour before serving, place the container in the refrigerator. Scoop the sorbet into balls and serve in glasses or bowls.
