Pears with Raisins and Walnuts

Steps

Wash the lemon thoroughly and peel the zest with a potato peeler. Save the zest and squeeze the lemon. Peel the pears, place them in a large bowl, and pour lemon juice over them to prevent browning.

Place a pot on the stove and add the peeled pears. Pour in water, add the lemon zest, broken vanilla pods, a pinch of cinnamon, cloves, and a tablespoon of brown sugar. Slowly heat and cook the pears for 10 minutes over moderate heat. Turn them occasionally. Then remove them from the liquid with a slotted spoon and set aside on a warm plate. Reserve the liquid.

Return the pot with the reserved liquid to the stove, bring to a boil, and cook for another 10 minutes until half of the liquid has reduced. Strain the liquid through a fine sieve. Serve the pears in bowls, sprinkle them with walnuts and raisins, and add a tablespoon of honey to each bowl. Pour a ladle of the liquid over each serving and serve to your guests.

Advice
We use smaller pears that can be cooked whole or cut into smaller pieces. It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, soak the lemon in hot water for a few minutes and wipe it well to remove the wax, which contains toxins.
