Pears with Thyme Syrup

Steps

Thoroughly wash the lemons. Peel the first lemon thinly with a peeler and squeeze the juice into a shallow bowl. Then finely grate the peel of the second lemon, which we will use for the glaze. Carefully peel the pears and remove the core (keep the stems), then roll them in the lemon juice to prevent browning. Break the cinnamon stick into smaller pieces. Wash the mint sprig well and pluck the leaves.

Place a non-stick pan on the stove and add the lemon peel from the first lemon. Add the pears, apple juice, and cinnamon pieces. Heat slowly and cook the pears over moderate heat for about 10 minutes. Turn them several times during cooking.

Then remove the pears from the pan with a slotted spoon and place them in a warmed serving dish, covering them with aluminum foil to keep them warm. Remove the cinnamon pieces and lemon peel from the pan, return the pan to the heat, bring the liquid to a boil, and simmer over moderate heat for an additional 8 minutes, until half of the liquid has reduced.

Then add ground cinnamon, maple syrup, grated lemon peel, and thyme to the pan. Serve the pears on plates, pour the prepared mixture over them, garnish with mint leaves, and serve to your guests.

Advice
Since pears ripen very quickly, it is best to buy them just a few days before use. You dont need to halve the pears; you can cook them whole. Its best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
